  • Central Eden Valley 27 year-old vines

This wine is from the vintage’s best Cabernet Sauvignon barrels and in 2017 produced from a single vineyard in central Eden Valley.

The fruit was handpicked and 100% de-stemmed into an open top fermenter, where it remained for 18 days. Naturally fermented and hand plunged daily then pressed to a mix of new and seasoned French oak hogsheads for maturation. Matured in barrel for 20 months with no racking, before being clarified and bottled without filtration.

Made in only exemplary years. This classic wine is our offering to Eurus, Greek God of the East Wind, and is only made in exemplary vintages when Eden Valley Cabernet Sauvignon displays outstanding quality. Eden Valley is typically cooled in the mornings and evenings by Easterly gully winds which are ideal for slowing the ripening and refining varietal flavours.

Density and definition. Impressive concentration of backcurrant and blackberry fruit, even fresh licorice and touches of menthol, all backed with high cocoa dark chocolate. French oak. Firm, fine, confident tannins direct a long finish. Full and impacting. Tyson Stelzer

Dry-grown at elevation, this has hit a very attractive band of quality in 2018, with intense roasting herbs and ripe black fruit, as well as tapenade, spice and some sweet tobacco. The silky palate has bold, fleshy depth and a very even, driving build. Drink over the next eight years. Nick Stock Oct 2021
