Hand-picked, destemmed with 10% whole bunch clusters, cold soaked for 5 days, naturally fermented for 20 days. Pressed to 500 litre French Puncheon barrels for 12 months unhindered maturation. Bottled without finings and filtration.

Montepulciano a native grape variety to the Adriatic Coast of Italy, and now grown in Eden Valley. ‘Monte’ is Italian for Mountain, and the high country of Eden Valley is ideally suited to growing this variety.
